1993年にマニラ初のオーガニックマーケットを開き、その後24年間に渡りオーガニックを広めてきたマーラさん。彼女は暮らしていたニューヨークから帰国すると、この国の人々に正しい食品知識を広めることが自分のなすべき事だと確信する。当時、ニューヨークではすでにオーガニックの実践が様々になされていたが、フィリピンではオーガニックを知る人は１％にすぎなかった。
彼女は、ツォーベル家に打診し毎週土曜日グリーンベルトパークの無償使用を取り付け、オーガニックマーケットをスタートさせた。たった４つのテーブルでのスタートだった。その後、農家の人たちや友人たちが加わり、徐々にその輪を広げ、場所をレガスピサンデーマーケットに移した現在では国内外各地から多くの仲間が集いマーラさんの活動を支えている。
「8～10年を経たころから、多くのレストランがサラダやスープなどにオーガニック食材を使用し始め、何軒かのオーガニック料理専門レストランも誕生しました。そして、24年を経た現在、新たなオーガニックマーケットも生まれ、私たちのマーケットも活気に満ちています。しかし、弊害として本質を満たさないまがい物が生まれているのは悲しいことです。
私は多くのビジョンを持っています。たとえばフィリピン国内のすべての街にオーガニックマーケットを広めること。さらに、私たちの食品に関する研究開発機関を設けデータの集積を行うこと。また、農業研修やワークショップなどのオーガニック体験を通じ次世代の若者たちに現代社会を生きる上での指針を示していきたいと思います。」

When she came back from living from abroad and knowing all these things she felt that her service she had to give her country and people was to teach them about very quality food that was difficult challenge because up to now organic is only 1% of 100% in the Philippines.
Mara’s Original Market started when she asked the Zobel family if she could use Greenbelt Park for 6 months with no rent since she will only be there for every Saturday so the first time was only 4 tables then the people she met, good friends, family then 3 other people who joined her who were farmers also asks their friend so maybe she had about 500 people who came.
“8 or 10 years later, Healthy Options open and there are many restaurants that offer organic food like salad and soup. Some restaurants are even specialized in organic food. Now 22 years later, we have market that’s very vibrant, many people have copied the organic market concept but the bad thing about copy-cats is that they don’t really follow the principles.”
