Japanese Summer Foods to Beat the Heat
Summer foods in Japan are all about how to relish the taste and refresh yourself in the heat and humidity of this season. Try them out and enjoy them as the Japanese do!
うなぎ
今年は土用の丑の日が2回
夏バテに効くと言われるスタミナ食材、うなぎ。年中温暖で特に4月、５月が暑いマニラにいるなら、とっくに食べておきたい魚でもある。しかし日本人にとっては、うなぎといえば夏の土用の丑の日。今年は7月に土用の丑の日が19日と31日の2回あるので、まだ食べていない方はぜひ日本料理店でうな重やうな丼をご賞味いただきたい。
ちなみにうなぎという名前は、昔、この魚の胸が黄色いことから胸黄（むなぎ）と呼ばれていたのが、うなぎに変化したという説があるそう。フィリピンにもうなぎは生息していてタガログ語ではIgat（イガット）というが、マニラではローカルのスーパーマーケットに売られているのは見ない。フィリピン人にとっては、あまり食卓ではなじみがないであろう。しかし、美味しくて美容と健康に効果が期待できるとわかれば、大人気となるポテンシャルを秘めている魚といえるかも。
Unagi
A Fish that Combats Summer Fatigue
Unagi is a long, thin fish resembling a snake, packed with nutrients like protein and iron. It means freshwater eel in English, and igat in Tagalog. Traditionally, Unagi is eaten during the “Dog Days” or “Doyo no Ushi no Hi,” which literally means ”Midsummer Day of the Ox.” July 19 and 31 are the days of this year’s Doyo no Ushi no Hi when you can try Unadon or Unajyu, which are rice dishes topped with glaze-grilled unagi.
そうめん
細ければ細いほどいい
世界に数ある麺の中でも、最も細いと言われるそうめん。日本農林規格によると、小麦を原料として作った麺の太さ径1.3mm未満のものをそうめん、直径1.3mm以上1.7mm未満のものをひやむぎ、1.7mm以上のものはうどんと分類される。
そうめんは奈良時代に中国から伝わった「索餅（さくべい）」というねじった縄のような形の菓子が原型で、平安時代には七夕の儀式の供え物として使われていたという。その後、鎌倉時代に細く長く延ばす技術によって今のそうめんの姿になった。細ければ細いほど良いとされ、ツルっとした食感とのど越しが味わえる。日本で最も細い麺は三輪山本のそうめん「白髪（しらが）」の約0.3mm。ゆで時間は約30秒である。
Somen Noodles
The Thinner, The Better
Among the many kinds of noodles in Japan, Somen is the thinnest one. According to Japanese Agricultural Standards, noodles made from wheat with a diameter of less than 1.3 mm are classified as somen, those with a diameter between 1.3 mm and 1.7 mm are hiyamugi, and those with a diameter of 1.7 mm or more are udon. So far, the thinnest has a 0.3 mm diameter, being cooked in 30 seconds. The thinner the somen, the smoother the texture, and the better to enjoy.
冷やし中華
夏の訪れを知らせる麺
「冷やし中華始めました」。中華料理店にこの決まり文句が貼り出されると、日本の夏到来である。天津丼や中華丼と同様、冷やし中華も日本発祥の中華料理であり、仙台起源説と東京起源説があるという。
日本人にとっては冷やし中華といえば麺料理のことだとわかるが、なぜ「冷やし中華そば」や「冷やし中華麺」という名前にならなかったのだろう？冷やし中華だけだったら、冷やした中華料理全般のことを意味してもおかしくないように思うのだが。しかも冷やし中華という名称は全国共通かと思ったら、関西では「冷麺」、北海道では「冷やしラーメン」と呼ばれる。冷麺といえば韓国料理にあり、山形県にはまさにラーメンのひんやり版、冷やしラーメンが存在する。
世界的に人気のラーメンに比べたら、冷やし中華の知名度はまだまだ。がんばれ、冷やし中華！
Hiyashi Chuka
The Summer Version of Ramen
Unlike your average ramen in Japan that are served hot, Hiyashi Chuka are cold noodles with either sweet and sour soy sauce or sesame sauce. They are typically topped with julienned cucumbers, shredded egg, ham, and tomatoes. It’s translated as “Chilled Chinese Noodles” and is an iconic dish in Japan during summer. With the tropical weather in the Philippines, Hiyashi Chuka can also be the perfect meal for Filipinos to cool down from the heat.
かき氷
シンプルゆえの奥深さ
歴史をさかのぼると、『枕草子』にも出てくるというかき氷。シンプルなデザートだが、製法には日本人ならではのこだわりが詰まっている。氷をつくる水は、天然水または純水（水道水を濾過した良質な水）を使い、時間をかけて凍らせることで溶けにくく、曇った白色に仕上げる。フワフワの食感を出すために氷を細かく、薄く削る。氷、その上にシロップという具合にレイヤー（層）をつくり、氷とシロップがうまく混ざるようにする。
フィリピンのデザート、ハロハロのいろいろなトッピングが載ってカラフル豪華な見た目に比べると、かき氷は地味でインスタ映えはしないかもしれない。しかし、純粋に氷のおいしさを楽しむのならかき氷のような姿であるべきではないか。刺身、寿司がそうであるように、かき氷もシンプルゆえに奥深いのである。
Kakigori
Cool and Simple Dessert
Kakigōri is a Japanese shaved ice dessert that traditionally consists of finely shaved fluffy ice and flavored syrup, like strawberry, melon, condensed milk, or green tea, topped with sweet red beans. Compared to Halo Halo, this dish is a lot simpler and might seem bland, but just like Sushi and Sashimi, Kakigori represents the Japanese simplicity of showcasing the pure taste of ingredients.
祭りの主役!? 屋台料理
カラフルな幕で飾られた屋台が立ち並ぶ日本の祭り。景品が当たるゲームやおもちゃ屋などさまざまな屋台があるが、やはり主役は食べ物。お腹を満たすなら、職人が手際よくつくる焼きそば、たこ焼き、お好み焼き。祭りならではのスイーツ、りんご飴、ベビーカステラ、チョコバナナを楽しむのも忘れずに。
