　　利き酒師でワインソムリエでもある佐藤光徳マネジャーは、お客様がきっと喜ぶであろう酒と食事を準備し、当日の宴席では日本酒の紹介で盛り上げる。スタッフには、 「店にいらしたお客様からお代をいただき、『ごちそうさま』『ありがとう』『おいしかったよ』とお言葉までいただける。やりがいのある仕事なのだから、心を込めてサービスをしよう」と常に言い聞かせているという。つむらがマニラ在住の駐在員から信頼され、親しまれるのもうなずける。

　実はメニュー表には載っていない「裏メニュー」もたくさんあるのだそう。

　　「お客様のご要望に応えるためには、多くの『引き出し』を持つことが大切。そのため、メニュー表には載りきらないメニューの開発にも力を入れています」
　テーブル間がゆったりとある店内は、コロナの感染対策にも気を緩めない同店の意思の表れ。どこまでも顧客への心配りが感じられる店なのである。
