インド・ジャイナ教の食事

 

Jain Cuisine: Considerate to
Every Living Thing Including Microorganisms

We are sure to go to Japan when we get the opportunity.’

 

 

 私たちの食生活は、ジャイナ教に基づくジャインフードです。ジャイナ教は、5000年の歴史を持つインドでも最も古い宗教の一つで、不殺生、非絶対主義、非所有が3つの柱となっています。すなわちあらゆるものに対して非暴力であること、カルマ(業、因果応報)の教えがあり、生きるものにできるだけ害を与えないことを徹底しています。ジャイナ教の僧や敬虔な信者は、大気中の微生物を吸い込んでしまわなうように白い布で口を覆うほどです。

 

 

土中の虫や微生物を殺さないように

 

 

 食べるものに関してもその教義に基づいて肉、魚、卵と食べることは禁じられ、菜食です。いも、にんじん、玉ねぎ、にんにく、ビートといった根菜類も使いません。なぜなら、根菜は土から掘り起こす際に、土の中の虫や微生物を殺してしまう恐れがあるからです。乳製品のヨーグルトやカッテージチーズ、バターは食べます。主食は、小麦でつくった自家製のチャパティというフラットブレッド、米、野菜、豆果からつくるカレーです。

 

 インドには、さまざまな食文化があります。ジャインフードもインドの多様な食文化の一つ。インド料理店ではベジタリアンのメニューも用意されているのが一般的で、頼めばジャインフードをアレンジしてもらえます。マニラでは今のところ、ジャインフードを提供する店は、私たちが知る限りありません。外食する時は、インド料理店でベジタリアンメニューを注文します。

HARVESTING ROOT VEGETABLES MAY KILL LIVES IN SOIL

 

 Jainism, traditionally known as Jain Dharma, is an ancient Indian religion of which the tradition holds to have lived millions of years ago and documented history of 5000 years. Ahimsā (non-violence), Anekāntavāda (non-absolutism), and Aparigraha (non-attachment) are the 3 pillars of Jainism. Karma and non-violence are the profound fundamental principles and Jains believe in no harm to any form of life, in fact Jain monks and devout followers cover their mouths with folded white cloth as a practice of Ahimsa to avoid swallowing and killing microorganisms in the air.

 

 Going by the principle of Jainism, Jain food excludes any meat, fish, eggs and even root vegetables such as potatoes, onions, carrots, beetroots, and garlics since uprooting these vegetables out of the ground may kill insects and microorganisms in the soil. Dairy products like yogurt, cottage cheese and butter are allowed. Staple food is home cooked wheat flat bread called chapati,vegetables, rice and curries made of legumes. It’s a completely vegetarian food curated by and following Jainism principle.

 

 India has diverse and wide variety of cuisines. Jain food is one of India’s diverse food cultures. Local Indian food restaurants usually serve vegetarian menus and have option to have it prepared following Jain preference. As far as we know, there are no restaurants serving Jain food in Manila. When dining out at an Indian food restaurant, we order vegetarian menus.
