＜ベトナム＞

ベトナム南部の米麺

ベトナム北部発祥のフォーに対し、南部ホーチミン市が本場の米麺フーティウ。ナムバンとはベトナム語でカンボジアの首都プノンペンのことで中国人がカンボジアからベトナムに持ち込んだ歴史に由来する。具はエビ、豚の臓物、うずらの卵。海、陸、空の命をいただくという意味がある。

Phu Tieu is popular in Ho Chi Minh City, southern Vietnam while Pho is originally from the north of the country. Nam Vang means Phnom Penh, Cambodia in Vietnamese. Hu Tieu Nam Vang was brought to Vietnam by the Chinese from Phnom Penh.

フォー入りビーフシチュー

ベトナムを代表する麺フォーが、ビーフシチューに入ったフォー・ボー・コー。あっさりとしたビーフベースのスープに薄切り牛肉が載った一般的なフォー・ボーに比べ、こちらは濃厚なスープに、煮込んだ牛肉がゴロリと入っている。

In Vietnam, it is said that pho noodles is a dish to enjoy beef. Pho Bo Kho is pho rice noodles in the rich beef stew soup including braised bite-size chunky beef unlike ordinary pho, which is served in a clear light beef broth topped with sliced beef meat. Which pho do you like better?

ネパールの焼きそば

見た目も食感も日本のソース焼きそばに似たネパールの炒麺（チャウミン）。ネパリ・キャンティーンではコショウがアクセントになっている。店主がカトマンズ出身の同店ではゆうに３人前はある山盛りで提供。さすがエベレストのお膝元ネパール！

Nepali mix noodles called chow mein, is a stir-fried yellow noodles with meat and vegetables. A hint of pepper enhances its flavor. At Nepali Canteen run by an owner from Kathmandu, Nepal, an order of the mix noodles is a large portion like a mountain, which reminds us that Mt. Everest is located in Nepal.

麺の食べ方アレンジOK

インドネシアの麺料理バクミー。細めで白いちぢれ麺にチキン、マッシュルーム、揚げワンタン、味付け卵が載った器とは別に、フィッシュボールスープが出てくる。麺をチリソースで和えてピリ辛風味を楽しむもよし、スープをかけて混ぜるもよし。

Bakmi is an Indonesian noodle dish. Rasa Baru restaurant’s Bakmi is thin white noodles with toppings of braised chicken, mushroom, fried wantan and flavored boiled egg. A fish ball soup comes with it. Mix noodles with chili sauce for a dry type or pour the soup over noodles.
